Episode 278 of me ordering the wrong thing on clicklist. Last weeks goof up was the 13 cartons of blueberries. So blueberry recipe research began and here are a few things I came up with. A yummy fruit salad with a honey lemon drizzle, frozen yogurt covered berries for the kids to snack on, and a lemon blueberry cake with a blueberry buttercream.
My hubby cracks up at how awful I am at clicklist and amazon orders. This is the photo I sent him when he was at work.

Fruit Salad with a Lemon Honey Dressing
- Use whatever fruit you want, I opted for strawberries, clementines, kiwi, watermelon, pineapple, blueberries and grapes

- 1 1/2 Tbsp fresh lemon juice
- *chopped fresh mint
Easy Breezy Lemon Blueberry Cake
This is a cheaters way to make a delicious cake. Simply buy a vanilla boxed cake and toss your blueberries in flour before adding them to batter. Add in some fresh lemon and make your own buttercream frosting and no one will know this wasn't 100% homemade. I used two 9 inch cake pans so I needed 2 boxes of cake.

- 2 boxes of vanilla cake mix
- ⅓ cup lemon juice (honestly I eyeballed this so maybe try a little batter to see if you get the right amount of lemon)
- 1 tbsp lemon zest
- 1 1/3 cup blueberries, fresh
For the Reduction:
- 1 tbsp water
- 1 cup blueberries fresh
- 2 tbsp granulated sugar
- 1 tbsp lemon juice fresh
For the Lemon Buttercream:
- 1 1/2 cups unsalted butter, room temperature
- 6 cups confectioners' sugar
- 3 tbsp lemon juice
- 1/4 tsp kosher salt

- Preheat oven according to box directions. Spray non stick spray on your two 9-inch pans.
- Prepare the cake mix according to directions.
- When beating the wet ingredients together add the fresh lemon juice at this time.
- In a small bowl, add blueberries and lemon zest. Coat with about 1-2 tbsp flour.
- Add the wet to the dry and mix until just combined. Fold in blueberry/lemon zest at the very end and mix until just combined.
- Divide the mixture evenly into the cake pans.
- Bake according to box instructions.
For the Reduction:
- In a small saucepan over medium-low heat, combine 1 cup blueberries, 1 tbsp lemon juice, 1 tbsp water and 2 tbsp granulated sugar. Mash and stir for a minute then reduce to a simmer. Simmer until reduced by half then strain into a small bowl to chill. I honestly eyeballed this too I used about a full carton of blueberries and added the ingredients according.
For the Lemon Buttercream:
- Cream the butter in a stand mixer then add in confectioners' sugar in a few batches.
- Add lemon juice a tbsp at a time until a desired consistency and taste is reached.
- Transfer about 1/2-3/4 cup to a small bowl (the plain buttercream will be for the filling in center) and mix in blueberry reduction a tablespoon at a time and mix or until you reach a desired flavor.
- I just used a knife to frost my cake cause who has time to pipe the whole thing when you have 2 kids.... I mean we are going for simple here!
- Add some decor like some fresh blueberries and you are good to go!
And that my friends is how you mostly make a cake from scratch!
