We just got home from a little family vacation in Oregon. Now that we travel with kiddos we no longer stay at hotels and opt for condos. Being able to cook meals at the condo is key with kids. I also try and make vacations as easy as possible making an egg casserole the night before leaving and this time I also made some fresh banana bread for trip. I am SO NOT A BAKER, but for some reason I can bake bread like the best of them. So here is a REALLY simple and quick banana bread recipe.
Cold brew coffee is my jam. For those of you who don't know about cold brew you are missing out. It is smooth, not bitter, and just better tasting coffee. When I lived in Portland I got addicted to Stumptown Cold Brew coffee in the summer months. The minute the weather gets warm I can no longer do hot coffee. When I moved back to Tri-Cities I couldn't find the perfect cold brew. I enjoy drinking coffee at HOME and I decided it was time to start making my own cold brew.
When the weather gets warm all I want is a margarita. It is my favorite summer drink. This week I was dying for a margarita and wanted something a little different. I have rosemary in my garden and I was wondering if I could do something with that. I viewed some rosemary margaritas recipes on pinterest but they all had grapefruit and I didn't have any at home. My eyes stumbled upon the watermelon I had just bought sitting on my kitchen counter and the idea came together. Ok so I'm really into cucumbers lately. Probably because Leo loves them so much so I end up eating them too. I was just eating cucumbers with red wine vinegar and salt and pepper but that wouldn't hold me over for very long. So I started throwing together different things in my fridge and came up with this little salad. I make it in advance usually on Sunday and I can snack on it on Monday and Tuesday. It is enough for lunch or a side for dinner.
Holy breakfast refresh, I was needing a change in my breakfast routine and SO WAS LEO! I was over my breakfast and Leo had decided to stop eating pretty much all breakfast foods. I partnered up with some awesome organic granola and cereal brands to create some new recipes. The first recipe I tacked with a smoothie bowl. Sadly we don't live in a town where I can get these very easily so I had to take matters into my own and make my own. It was super easy and beyond delicious.
I am NOT A BAKER! Let me repeat I AM NOT A BAKER! But the was one of the best thing I ever baked and I actually didn't screw it up! There is no secret I love sweets and this blueberry lemon bread is my perfect kind of treat. This is perfect for spring time and it will wow your guests if you serve this at brunch.
A quick recipe for you on this Wednesday. These photos have been sitting in my photos waiting to get used. I made this a few weeks ago and never blogged about it so I hope I remember all the ingredients. What I do know is that it was delicious, healthy and I finally got my husband to eat avocado!
I REFUSE to make two separate meals at our house. What we eat is what Leo eats or some variation of that. I have talked to many moms who go to great measures to make different meals. That wasn't happening at our house. I made a lot of purees when Leo was little but now that he is a big boy and he can eat what we are eating. So this blog post is laying out a few different meals you can make for your kiddos. When we eat at home the biggest thing I try to do is make sure they aren't processed. I try to give him his food in it's whole state and in return when we eat out Leo then gets to enjoy mac and cheese, grilled cheese, french fries etc. But when we are home we try to keep his meals balanced, healthy, and try to expose him to different types of food.
I keeping seeing things pop up or people talking about all the health benefits of Tumeric. I decided to dive deeper and see what the rage is all about. After reading all about it (I really liked this article) I decided I needed to try and incorporate it into my diet. Turmeric is common in South Asian cooking, but hadn't made it's way into my spice cabinet. After doing the research and reading all the amazing benefits of the spice I decided to add it into our diet. You can get it both in raw or powdered form. I was able to find both forms at my local grocery store. Best of all it tastes pretty darn good and is good for you.
I know I often get in lunch ruts. A year or so ago I did a blog post on some lunch wraps, it was one of my highest viewed blog posts of all time. So I thought I'd share with you my current lunch obsession. Quinoa bowls, in the summer I eat salads but they don't seem to do the trick for me in the winter. So these two quinoa bowls have been my go to. They are easy to pre make for a few days and I promise you will love them.
