Holy breakfast refresh, I was needing a change in my breakfast routine and SO WAS LEO! I was over my breakfast and Leo had decided to stop eating pretty much all breakfast foods. I partnered up with some awesome organic granola and cereal brands to create some new recipes. The first recipe I tacked with a smoothie bowl. Sadly we don't live in a town where I can get these very easily so I had to take matters into my own and make my own. It was super easy and beyond delicious.
I am NOT A BAKER! Let me repeat I AM NOT A BAKER! But the was one of the best thing I ever baked and I actually didn't screw it up! There is no secret I love sweets and this blueberry lemon bread is my perfect kind of treat. This is perfect for spring time and it will wow your guests if you serve this at brunch.
A quick recipe for you on this Wednesday. These photos have been sitting in my photos waiting to get used. I made this a few weeks ago and never blogged about it so I hope I remember all the ingredients. What I do know is that it was delicious, healthy and I finally got my husband to eat avocado!
I REFUSE to make two separate meals at our house. What we eat is what Leo eats or some variation of that. I have talked to many moms who go to great measures to make different meals. That wasn't happening at our house. I made a lot of purees when Leo was little but now that he is a big boy and he can eat what we are eating. So this blog post is laying out a few different meals you can make for your kiddos. When we eat at home the biggest thing I try to do is make sure they aren't processed. I try to give him his food in it's whole state and in return when we eat out Leo then gets to enjoy mac and cheese, grilled cheese, french fries etc. But when we are home we try to keep his meals balanced, healthy, and try to expose him to different types of food.
I keeping seeing things pop up or people talking about all the health benefits of Tumeric. I decided to dive deeper and see what the rage is all about. After reading all about it (I really liked this article) I decided I needed to try and incorporate it into my diet. Turmeric is common in South Asian cooking, but hadn't made it's way into my spice cabinet. After doing the research and reading all the amazing benefits of the spice I decided to add it into our diet. You can get it both in raw or powdered form. I was able to find both forms at my local grocery store. Best of all it tastes pretty darn good and is good for you.
I know I often get in lunch ruts. A year or so ago I did a blog post on some lunch wraps, it was one of my highest viewed blog posts of all time. So I thought I'd share with you my current lunch obsession. Quinoa bowls, in the summer I eat salads but they don't seem to do the trick for me in the winter. So these two quinoa bowls have been my go to. They are easy to pre make for a few days and I promise you will love them.
When we first had Leo someone brought us over stuffed shells, they were so good, but look very difficult to make. I had been intimated. So one day when Jay was off work and able to watch Leo I tacked this project expecting it to take 2 hours. Surprisingly it took less than 20 minutes. I was blown away how easy and delicious these were to make. I made this for a "meat less monday" meal. My husband didn't even miss the meat.
HI!! I'm back and quickly gone again. I wanted to post one last blog post in 2016. I have been so busy with Christmas and our remodel that I haven't had a chance to blog lately. Every January I usually do a series on healthy habits. This instead of putting together lists of things you should do I decided I would dive deeper into a few things that make my life simplier. For me the #1 is Meal Planning.
No calorie splurge here with these carrot and zucchini tots. I was making them for Leo, but Jay and I ended up also eating them for dinner. I won't lie they don't taste like real tater tots, but they are pretty good. Especially when dipped in some ketchum. Leo mowed them down and it is a great way to get some healthy veggies into your kids diet!
Are you in a lunch rut? I often find myself in one. I had planned to post a few different lunch ideas and I will add a few others in the weeks to come. But I ended up making this and have been eating it non stop for the last 2 weeks. So when I get back from vacation I promise to test out those other recipes. Life is busy so I try to have something healthy in the fridge to eat for lunch. I find that if I make something healthy like this on Monday. I tend make better eating choices the rest of the week if I start the week off on the right foot. So here is what I'm currently eating for lunch!
