It's apple season! I love getting apples from the farm ones that aren't waxed and have not been sitting in cold storage all season long. I eat a few apples a day during this time of year and I love finding new recipes to use them in. Last year I made apple scones and apple cake, this year I decided to make an apple fritter bread. I love apple fritters, so I decided to look to see if I could make a version of them. I found and modified a recipe and came up with this! I won't say it's healthy, but I will say it's delicious. Eat it for breakfast or dessert, it won't disappoint.
The best part about this baking recipe is that it doesn't take a lot of prep time. I only took me about 30 minutes of prep time from peeling the apples to getting the loaves in the oven. The baking time is a bit tricky depending on the type of apples you use so the last 10-15 minutes you kind of have to watch the oven and keep checking them to see if they are done. I think this was more of an issue for me cause I baked the loaves them in two difference sized pans.

I had to leave to go volunteer and I get a phone call from my husband..... that our DOG HAD GOT THEM OFF THE COUNTER AND ATE 2 OF THE 3 LOAVES. I was laughing at first but a little mad, I had worked so hard and baked what felt like all day. But since I had all the ingredients I came home and made 2 more small loaves.

YIELD: TWO 8x4 inch loaf, or 1 8X4 inch loaf and 2 5X3 inch loaves
**** FOR ONE LOAF CUT RECIPE IN 1/2
INGREDIENTS:
Apple and Cinnamon Mixture
2-3 large apple fuji apples peeled, cored, and diced into 1/4-inch pieces
3 tablespoon granulated sugar
3 teaspoons cinnamon, if you want more use more
Walnut, Cinnamon and Brown Sugar Mixture
1/2 cup brown sugar,
3 teaspoons cinnamon
1 package of Walnuts
Bread
3 large egg
1 cup granulated sugar or brown sugar
3/4 cups canola or vegetable oil
3/ 4 cups plain Greek yogurt
3 teaspoon vanilla extract
3 cup all-purpose flour, I did 2 cups of regular flour and 1 cup of coconut flour
3 teaspoon baking soda
1 teaspoon of salt
Glaze
1 cup confectioners' sugar
3 tablespoons of milk

DIRECTIONS:
- Preheat oven to 350F. Spray loaf pans with coconut oil spray.
- Make the Apple and Cinnamon Mixture! Using a small bowl, add all ingredients and stir.
- Make the Walnut, Cinnamon and Brown Sugar Mixture! Using a small bowl, add ingredients and stir.
- For the Bread. Using a large bowl, add eggs, sugar, and whisk until smooth, it'll take about 1 minute of whisking.
- Add the oil, sour cream, vanilla, and whisk together.
- Add the flour, baking soda, salt, and whisk together.
- Pour half the batter out into the loaf pans, you have 2 or more pans so divide 1/2 of the batter between the 2 to 3 pans depending on the sizes you chose. There isn't a lot of batter so make sure not to add to much into each pan. I had to add a little milk into my mixture to make enough batter at the end. You don't need a ton of batter the batter will rise when the bread is cooking.
- Sprinkle and divide half the apples between both pans.
- Sprinkle and divide half the walnut, cinnamon, and brown sugar between both pans.
- Add the remaining batter between the two pans, smoothing out with a spatula.
- Sprinkle the remaining apples you have between two pans.
- Sprinkle the remaining walnut, cinnamon and brown sugar between the 2 pans.
- Bake for about 45 minutes, for the small pans I only baked about 40 minutes and for the bigger one it was closer to 55 minutes. I just watched it and started checking the last 10 around 40 minutes by inserting a toothpick. If the toothpick comes out clean with no batter than you are good to go!
- To avoid the apples burning the last 5-10 minutes I put foil over the top of each pan. Remember the baking times may vary based on the amount of apples you put in the bread. A more juicy apple will create a longer cook time.
- Allow pan to cool on top of a wire rack for at least an hour.
- For the glaze use a small bowl, add the confectioner's sugar and a little but of milk. I just whisked with a fork, if you want the glaze to be thicker add in more sugar.
- Drizzle the glaze over bread.
- I recommend storing it in the fridge because it has greek yogurt in it and sometimes when I bake with greek yogurt the baked items tend to mold after a few days. To avoid that I wrapped them in saran wrap and placed in the fridge.
This is Arson after he ate 1/2 of our bread. We took a picture of him in the middle of his sugar crash.... Needless to say his tummy didn't feel so well after. We still don't know how he got it off of the back of our tall counters. I wish I had a video camera in our kitchen. We couldn't help but laugh at this guys determination to get what he thought was his!
