Ok this is the best cake I have ever made in my entire life. I make it only once a year cause my husband and I can’t keep our paws away from it. Jay literally eats it with breakfast. I found this recipe a few years ago and have worked with it a little to make it perfect. This isn’t a healthy treat, it is just a delicious one. I am going to make this for Christmas for my family to enjoy. I usually do a classic buttercream frosting, but my friend Ashley recommended finding a caramel one. She found me this recipe and it didn’t disappoint. It was the perfect combo with this apple cake. I mean who doesn’t love apple and caramel paired together. Anyways, this is simple, yummy, and worth EVERY CALORIE!
Apple Spice Cake
Ingredients:
Ingredients:
- 1 1/2 cups chopped pecans
- 1/2 cup butter, melted
- 2 cups sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 4 large Fuji Apples, peeled and cut into 1/4-inch-thick wedges
Preparation:
1. Preheat oven to 350°. Bake pecans in a single layer in a shallow pan 5 to 7 minutes or until lightly toasted and fragrant, stirring halfway through.
2. Stir together butter and next 3 ingredients in a large bowl until blended.
3. Combine flour and next 3 ingredients; add to butter mixture, stirring until blended. Stir in apples and 1 cup pecans. (Batter will be very thick, similar to a cookie dough.) Spread batter into a lightly greased 13- x 9-inch pan.
4. Bake at 350° for 45 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack (about 45 minutes). Spread your choice of frosting over top of cake; sprinkle with remaining 1/2 cup pecans.
Fluffy Caramel Cream Cheese Frosting
Ingredients:
1. Beat the cream cheese and butter until smooth and creamy.
2. Add the caramel sauce and vanilla; beat until well blended.
4. Add 3 1/2 cups of confectioners’ sugar and beat on low speed until blended.
5. Add more confectioners’ sugar, if needed.
6. Increase mixer speed and beat on high speed for 2 minutes.
Makes about 3 cups of frosting
Eat and enjoy! TRUST ME this will be a recipe you will repeat over and over again.
