A quick recipe for you on this Wednesday. These photos have been sitting in my photos waiting to get used. I made this a few weeks ago and never blogged about it so I hope I remember all the ingredients. What I do know is that it was delicious, healthy and I finally got my husband to eat avocado!
I have made pesto many times, but I had never tried using an avocado, it really made the sauce super creamy, I was expecting it to taste a lot like avocado, but the garlic and basil still shined through.
Avocado Pesto with Zucchini Noodles (and Chicken)

- 4 large zucchini, spiralized
- 1 Tbsp olive oil
- Parmesan Cheese
- 2 avocados
- 1 cup fresh basil leaves
- 3 cloves of garlic
- ¼ cup pine nuts
- 1 juice of a lemon
- ½ tsp. sea salt
- 1/2 tsp cracked pepper
- 3 Tbsp olive oil
Chicken:
- 4 chicken breast
- olive oil
- garlic
- salt and pepper
INSTRUCTIONS
- Spiralize your zucchini I use this brand and set aside on paper towels so water can drain.
- Bake your chicken, all I used was olive oil and salt and pepper. I usually bake mine on 350 for 40 minutes, I start checking it around 30 minutes. It all depends on the size of the chicken breasts you get.
- In a food processor, add avocados, basil leaves, garlic, pine nuts, lemon juice, olive oil and salt and pepper until pureed. It should be pretty creamy.
- Add olive oil in a large skillet over medium high heat then add zucchini noodles, cooking for about 1 to 2 minutes until tender.
- Add zucchini noodles to a large bowl and toss with the avocado pesto. Top with sliced chicken breasts and extra basil leaf and season with cracked pepper and parmesan cheese.
I did have to make my husband and son a little bit of pasta noodles, but I ate the zucchini noodles and that was enough for me. This is also a great meatless meal, the avocado pesto is hardy enough for me, I don't know about my husband. He has the idea if that meal doesn't have some type of meat it isn't a meal.
We are planning on moving this weekend and most of next week. I'm hoping to have a fashion post for you in the coming days but I'll probably still be a little quiet on the blog.
Did I mention how much I LOATHE packing? After this move I'm planning on not moving again for at least 20 years!
