Probably my favorite BBQ side dish. I had these a few years ago at my friend Mags house and I have been making them regularly ever since.
These are so so easy to make. The night before I marinate cut up peppers and yellow onion in balsamic vinegar and olive oil. I just eye it, but I usually use a generous amount of balsamic and about half as much oil. The next day with dinner I just throw them on the BBQ or roast them in the oven. Such an easy side dish that everyone loves.
