A few times a year I get on a huge beet kick. I am currently on one now, so I have been playing around with some new recipes. You can buy beets already peeled and cooked in some grocery stores, I do it that way so they are easy to throw in to any dish with literally no preparation.
Beet Salad |
For the salad:
2 cups of salad of your choice (I used a spring mix)
2 beets, trimmed and cooked
1 mangarine orange, or citrus fruit of your choice
feta cheese to your liking
sprinkle with walnuts
Gently toss all ingredients
For the dressing:
3 tbsp orange juice (freshly squeezed recommended)
1 tbsp lemon juice
1 tbsp Dijion mustard
1/2 shallot, minced
2 tbsp olive oil, or walnut oil
salt and pepper to taste
In a small bowl whisk together all ingredients and drizzle over salad.
