It is Mother's Day weekend and if you are looking for something to make I highly suggest these scones. All you need to spare is 45 minutes and maybe a quick trip to the store. I had all the ingredients at home except the coconut extract (I had to buy imitation) and the heavy cream but I accidentally bought heavy whipping cream but it worked perfectly. I have a girlfriend visiting from out of state this weekend and I always like to have some quick breakfast options for guests if they wake up early or we are in a rush to get out of the house in the morning.
Ingredients
- 2 1/2 cups flour (I used whole wheat but you can use regular)
- 1/3 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 8 Tablespoons cold butter
- 1 1/2 cups fresh blueberries
- 1/2 cup shredded sweetened coconut
- 3/4 cup heavy cream + 1 Tablespoon
- 1 egg
- 1 teaspoon coconut extract
- 2-3 teaspoons coarse raw sugar
- 1 1/2 cups powdered sugar
- 1 teaspoon coconut extract
- 2 Tablespoons water
Instructions
- Preheat oven to 400 degrees. Line your baking sheet with parchment paper
- Whisk together the flour, sugar, baking powder, and salt.
- Add the cold butter. Using a fork or pastry blender, mix in the butter until there are no large pieces of butter left. Refrigerate the flour mixture while the oven heats and you prep the other ingredients.
- Stir in the blueberries and coconut. Create a well in the center and pour in the 3/4 cup heavy cream, egg, and coconut extract. Use a fork to pull the mixture together gently until a soft dough forms. Divide the batter into two even balls. Pat the dough balls into two 6 inch circles.
- Brush the tops and sides of the circles with the remaining heavy cream and sprinkle with coarse sugar.
- Bake for 25-27 minutes. Remove the pan from the oven and cut each circle into six wedges. Pull the scones apart slightly. Place back in the oven for another 2 minutes.
- Remove and let cool on the baking sheet for a few minutes and if you have a cooling rack you can place them on one.
- Whisk together the powdered sugar, extract, and water and drizzle on the tops of the cooled scones. Let set. Store in a tightly sealed container.
This is an easy yummy treat to bring to a Mother's Day brunch. Like I said Monday Jay works Mother's Day so I don't really have any plans on actually Mother's Day except that Leo big boy bed is arriving!!! He is so excited and yesterday his bedding from restoration hardware arrived and he thought the box was his big boy bed. He even asked if he could sleep in it. His mind is going to be blown when the actual queen bed arrives Sunday!
