Breakfast lovers I have another good recipe for you. I love making eggs and turkey bacon for breakfast, but I hate the clean up. I've been seeing and hearing about all these egg muffins cups so I decided it was time to test this out. I am a big fan of the Denver omelet so I basically made the same version but in the cups. It was simple and so easy and lasted me the entire week. Highly highly recommend doing this!
Denver Omelet Egg Muffin Cups

Ingredients:
- 10 large eggs
- ½ cup skim milk
- 10 slices of Turkey Bacon sliced
- ¼ cup minced green onion
- 1 bell pepper chopped
- 1 tomato chopped
- 1/2 cup of shredded cheddar cheese
- salt and pepper to taste
Instructions:
- Pre-heat oven to 425 degrees and spray a muffin pan with cooking spray.
- While oven is heating fry your turkey bacon. Then chop it up.
- In a large bowl, whisk together eggs and milk until light and fluffy. Stir in the turkey bacon, green onion, bell pepper, tomato, cheese and salt and pepper.
- Divide egg mixture evenly between 12 muffin tins.
- Bake until eggs are set, 10-15 minutes. Let cool before removing the eggs
- Place and a tupperware and eat all week. I simply warmed them up in the microwave for 1 minute prior to eating them.
