Yes you read that right a bagel salad. So you can act like your eating well with a side of bagel. I have been making homemade croutons for years. I love what they add to homemade soups and salads but I have never thought about using a bagel. GAME CHANGER.
Bagel Salad-

Ingredients-
- Everything Bagel
- olive oil
- 1 can of cannellini beans
- 1 lemon
- 1 tablespoon white wine vinegar
- arugula
- 1 bell pepper
- handful of cherry tomato
- 1/3 cup of store bought or homemade pesto
- 1/4 cup shaved parmesan
- 2 chicken breasts
- garlic
- red pepper chili flakes
- salt and pepper
Instructions-
- In a large skillet using lemon juice garlic and pepper you can pan fry, grill or bake your chicken breasts then slice them.
- While the chicken is cooking heat 2 tablespoons of olive oil over medium heat. As oil simmers add in your cut up everything bagel and cook tossing until it is toasted.
- In a bowl, combine beans, tomato, and bell pepper. Then toss with pesto, olive oil (1 tbsp), vinegar, lemon juice, salt and red pepper chili flakes.
- Add the pesto coated veggies with arugula, parmesan cheese, and everything bagel croutons. Toss until it is combined. Then top with chicken.
- If you need additional dressing you can add more oil and lemon juice.
This bagel salad might be my new go to salad. You can leave the chicken off and it can be the perfect salad to accompany any type of dinner.
