New year new diet.... that is often people's motto but I have never been one to "diet". I am ALL about eating healthy and eating what your body craves. Jay and I eat pretty clean at home most of the time and I am always looking to create new recipes Jay and I will both enjoy. So here is my new lunch favorite Thai chicken quinoa bowls. You can make everything ahead and then make a new bowl every day at lunch this way it keeps all the ingredients fresh.
Ingredients-
Chicken-
Cabbage Slaw
purple cabbage, finely chopped
Toppings
Instructions-
CHICKEN
Chicken-
- 3 large chicken breasts baked with ginger turmeric and EVOO
- 1 large sweet potato, diced ( I buy the pre diced frozen ones)
- Handful of carrots, diced
- 1 tablespoon minced garlic
- 1 teaspoon minced ginger
- 2 tablespoons EVOO
- Salt and Pepper
Cabbage Slaw
purple cabbage, finely chopped
- 1 cup edamame (frozen section)
- 1 red pepper, diced
- celery
- 1 tablespoon soy sauce
- 2 tablespoons EVOO
- 1 lime, juiced
- 1 tablespoon maple syrup
- 1/4 teaspoon garlic powder
- 1/4 teaspoon fresh ginger (you can use ground)
- orange zest
Toppings
- peanuts
- fresh cilantro
Instructions-
CHICKEN
- Season chicken with a little garlic, turmeric and EVOO. Place in a baking pan and bake at 350 for 35 minutes or until chicken is done.
- Place diced vegetables on a baking sheet and drizzle with EVOO. Then, add in minced garlic and ginger and season with salt and pepper. Toss. Roast at 400ºF for 25-30 minutes or until you can pierce the veggies with a fork.
- Place purple cabbage, edamame, and red pepper in a bowl. Set aside. Make your dressing by whisking together EVOO, lime juice, soy sauce, maple syrup, ginger, garlic, and dried orange zest. Then, toss veggies in dressing.
As you can see in the top photo I separated everything out so I can throw all together each day. I also put the dressing on the side so that everything wasn't sitting in the dressing. I just used some lime juice on the slaw to keep it fresh. Once I threw everything together I topped by with cilantro, peanuts and the dressing. It was so yummy and the roasted veggies were a good touch if you warm them up before you put them into the bowl. .
Let me update you on my January goal of no shopping.... I have broke the "no shopping rule" once. But this is when I had to buy Monroe new snow boots. We thought she could wear Leo's from when he was little but they were 2 sizes to big and kept falling off of her. I felt so guilty breaking my "rule" but after talking to Jay he said I was acting silly and if our daughter needed snow boots then we needed to buy them for her. Other than that 17 days and still going strong, Jay is so enjoying the lack of amazon packages arriving. I have been purging my closets I have a heaping pile in my closet that I need to donate. All and all no shopping January is going amazing.
