Is quinoa still a thing? I remember a few years ago it being all the rage. I have since then continued to eat it and recently trying to manage 2 kids and make healthy meals I've been eating it even more. I really like quinoa cause you can make it ahead let it sit in the fridge and warm it up when you need it. I'm sharing today my go to breakfast and lunch the last couple weeks.
quinoa Breakfast Bowl
Ingredients:
Quinoa
Vanilla Almond Milk
Banana
Blue Berries
Pumpkin Seeds
Peanut Butter (or almond butter)
Directions:
Precook quinoa and put in fridge. In the morning I just add in some almond milk and microwave for a few minutes. Then top with bananas, pumpkin seeds, and blueberries. Stir in some peanut butter and enjoy! So simple it is a great meal for when you only have 5 minutes to spare in the morning.

Buffalo Chicken QUinoa Bowl
Ingredients:
Shredded Chicken
Quinoa
Lettuce
Cucumber
Bell Peppers
Cherry Tomatoes
Carrots
Celery
Avocado
Buffalo Sauce
Ranch Dressing
Directions: I precook the quinoa and chicken. For the chicken I throw it in the crockpot for a few hours with just chicken stock salt and pepper (do not add the buffalo sauce it makes it all slimy) and shred it then just have it in my fridge. Then I take it out heat it up and toss it with some buffalo sauce. I also precook quinoa so that is in the fridge so I heat it up as well. Then I usually just look and see what veggies I have and throw some of them in my favorites being cucumbers, cherry tomatoes, and celery. Toss all the ingredients together. Then I just add some more buffalo sauce and olive oil but when Jay is eating it he gives his buffalo bowl a healthy dose of ranch dressing.
This is such a quick lunch recipe and I think it would be perfect to pack to work as well. I'm all about simple right now but I don't want to get into a habit of eating lean cusines or peanut butter and jelly so I like having healthy options in my fridge to eat is key.
