While in Rome there was the cutest lunch spot across from our hotel that we frequented daily. They had the most delicious salami salad, I have not stopped thinking about it since I have been home. I finally attempted it at home and it turned out delish!
ingredients
Salad
Dressing
- chopped romaine
- 2 roma tomatoes chopped, or a carton of cherry tomatoes cut in half
- 1 cucumber, but in small pieces
- 1 cup of pitted black olives, chopped
- 1/2 red onion, diced
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- 4 ounces Italian salami, chopped
- 6 ounces fresh mozzarella cheese, chopped
Dressing
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 garlic cloves, pressed
- 1/4 teaspoon mustard
- 1/2 teaspoon italian seasoning
- 1 teaspoon honey
- salt and pepper to taste
Directions
- Combine all salad ingredients
- Combine all the dressing ingredients in a medium bowl. Whisk until well combined
- Pour the dressing over the salad and toss to coat
This is a perfect salad for lunch, and I have even made it as a side dish for a BBQ. You seriously will not be disappointed with this salad!
