I hope everyone is rested from your Thanksgiving holiday. I realized I hadn't blogged in about 2 weeks. We were down with colds then Thanksgiving came and life has just been busy. But if your anything like me you might of splurged this past weekend during thanksgiving. (My favorite splurge is pumpkin pie with LOTS of whipped cream.) I still managed to get my workouts in all week long but my eating was not on point. So this week I have gotten back at it with this winter salad. I know salads don't sound good when it is 30 degrees but I promise this one will hit the spot.
Kale Pomegranate Chicken Salad
Ingredients
Tips to Save Time:
Ingredients
- Baby Kale (I like this better than regular kale)
- 2 Cooked Chicken Breasts (I baked mine for 45 minutes at 350 with salt and pepper and olive oil)
- 1 Fuji Apple
- 1 cubed and cooked sweet potato
- 1 Pomegranate
- Celery
- 2 Carrots
- Feta Cheese
- Walnuts
- Balsamic Dressing *Any kind you like will work, I did a strawberry Balsamic Vinaigrette
Tips to Save Time:
- Cook Chicken- bake 350 for 45 minutes with mild seasoning of your choice
- Buy pre cubed frozen sweet potatoes * I use this brand below that I get in the organic frozen food aisle. Then I simply throw them in the oven and bake them skipping the whole peeling and cutting process.
- As far as the dressing goes I grab whatever I have but you could also just do olive oil and your own balsamic or try a berry flavored Balsamic Vinaigrette.
- Also if you are afraid to get pomegranates because you don't know how to deseed them then watch this video. This is how I do them and it is so easy. I simply do them in my sink so I don't make a mess. Plus this video is funny!

I am hoping to do a little blog post on must have newborn/infant items here soon. Like I said we have been so busy and when I do have a spare moment I am either sitting down to relax for 20 minutes, decorating for Christmas, or trying to get a workout in. I decided to join a little beach body workout group for the last 8 weeks of the year. I was a little nervous about doing one of those groups but I will say I ABSOLUTELY LOVE IT! It keeps me so motivated to workout on days like today when I really just wanted to sit on the couch and watch a Hallmark movie while the kids napped. Instead I looked at my little group feed and saw all the girls who worked out and I thought.... I can muster up some energy for 30 minutes. I am not going to be a coach or anything like that but I do like the little accountability it has given me to get back into shape at home since I can't make it to the gym as often as I'd like.
