OH MY GOODNESS Leo is 18 months old today. I can't believe my little boy is so old. I am constantly reminded how fast he is growing up. Just like last night when HE TOLD ME it was time for night night and milk. Then proceeded to walk upstair into his room while I poured the milk downstairs. I gave him his cup he drank it down, we brushed his teeth, said our prayers and he blew me kiss and said byeeeeeee Momma! It just seems like yesterday when I counted down the hours till it was his bed time and now the nights totally get away from me cause we are having so much fun and he is asking ME to go to bed. I love him and his little personality, but there are times I miss my little baby. Anyways..... today I'm going over some of our quick go to foods from the freezer.
So I wanted to go over a few of our go to freezer foods. I get all my food at Fred Meyer so I am sure you will be able to find most of these things at your local grocery store. About 1/2 of it is in the organic section and the other 1/2 I've found in the regular freezer aisle. As you can see along with the freezer food I load up on berries, bananas, hummus, carrots and sugar snap peas, avocado, and black beans. I know with all this food I can always throw together a fairly healthy meal for Leo.
Leo isn't a big meat fan. He loves these broccoli and sweet potato tots, the broccoli littles, and cubed sweet potatoes. They are perfect little sides for them. We eat a lot of quinoa in our house and when Leo eats it he makes the biggest mess. So instead I'll cook him some of these instead. For breakfast Leo loves eggs but when I don't have time to make eggs or when he wakes up an hour after I have already eaten my go to are the whole wheat eggo waffle. I put some peanut butter on it and some 100% maple syrup and he loves it. I also try to get him to eat the organic breaded chicken tenders, but I haven't been as successful. He just doesn't like meat.
Our other GO TO is this Amy's organic burrito. This is LEO's JAM! I first bought them for myself and then Leo started asking for bites and now he eats them. These burritos are perfect for when you have babysitter or I usually pack some in his bag when he goes to my parents or my in laws. Like I said Leo doesn't do a lot of meat but seems to like these turkey breakfast sausages that I find in the organic section at Fred Meyer.
We don't rely on freezer foods but often times we use one of the freezer foods as a substitute to what us adults are eating. I put two meals below of what a lunch or dinner looks like.

Breaded Chicken, garden tomatoes, black beans and corn, and some mexican rice. *Jay and I were having burrito bowls this night and the chicken I made was fairly spicy so the alternative was the breaded chicken then we used some of the fixing for his side dishes.
Garden cucumber, tomato, and green pepper, turkey sausage, and broccoli littles. This night we had buffalo chicken salads so there wasn't much at all from that meal he could eat other than some of the veggies. So this is how I used our freezer food for this meal. I think it is all about balance.

So we are super into these RX Bars. I started eating them myself then I was at Target and saw the kids version. LEO LOVES THEM! And I love that these are the simple ingredients. How great is that!!
