Hi! Happy Easter weekend, boy is it a busy one for us. My Husband had a great idea to get 6,000 lbs of pea gravel delivered today for our swing set so we will be shoveling and moving gravel al weekend. Woo-Hoo! So about 2 months ago I started doing lunch meal prep and I wanted to share those ideas with you. I've been trying to work on my #summerbod and if I don't have lunches prepped for the week I am setting myself up for failure. So I prep all my food Monday when I have a sitter and eat it Mon-Thur. Then Thursday I usually do my prep from Fri-Sun. I don't always eat every lunch at home on the weekends, but if I know I am going to be home I'll make something for myself. Here are my 4 go to lunches I pretty much eat ground turkey most days but, as it starts getting warmer I'll start adding in some chicken salads.
Meal 1- Ground Chicken Lettuce Wraps and Pea Pods
First off I got these awesome little meal containers on Amazon. I didn't mean to get 21 but that's what they came in. But just throw them in the dish washer and they work good and seem to hold up great. I found a recipe on pinterest for the chicken lettuce wraps but modified it to make it healthier.

Meal 2- Ground Turkey (with Montreal Seasoning Salt) Quinoa Brown Rice and Zucchini
This is probably the #1 meal I eat. It is so easy and when Jay is on a nights this is what I'll eat for dinner since I'm eating alone. But I love ground turkey and simple seasoning. Then I get the bagged Quinoa Brown Rice mixture and then simply saute some zucchini.

Meal 3- Stuffed Peppers
Once again I took some ground turkey and cooked it up with some onion and carrots. I boiled some bell peppers and took more of the brown rice quinoa mixture and mixed it all together. Then put the ground turkey rice mixture into the peppers and cooked it in the oven for 20 minutes. I ate one pepper a day with a side of blueberries.

Meal 4- Ground Turkey with Zucchini and Pasta
Simple simple simple! I needed a little carbs so I added in a few noodles. I use the beach body 21 day fix containers to determine my carbs for these. I just like them for knowing how much to measure out. But I try and not go overboard on my carbs. I really like zucchini cause it lasts awhile in the fridge and it is easy to cook.
It is SO SO SO simple but they are healthy balanced meals. I try and do really good for my breakfast and lunches then I have a little wiggle room with what everyone else is eating for dinner. I am by NO MEANS an expert on food or nutrition I just eat what I think is healthy. When I"m breastfeeding I crave protein. So I often snack on turkey slices, turkey pepperoni and cheese sticks. When I don't have time to make myself lunches I eat the Cafe Steamers for lunch. I know it isn't the most filling with 220 calories so I'll usually have a protein shake a few hours after.

Like I said I'm NO EXPERT. I have a long way to go, I'm currently down 5 lbs from my pre pregnancy weight and I am hoping to lose at least 5 more. 99.9% of what helps me lose weight is eating. I enjoy working out and working out hard so that isn't my issue my issue is in the kitchen. So if I set myself up for success I am more likely to have it. If I have healthy meals at my fingertips I will eat them vs making an excuse to get take out or make a PB and J sandwich.

So I spend the end of the egg hunt sneaking eggs out of his basket and giving it to the other kids. Oh Leo!!
