Cooking everyone a healthy breakfast is so important at our house. Leo's order for breakfast most mornings is "eggs, turkey bacon, waffles, and fruit". I feel like a personal chef, between the 3 of us then Monroe started eating breakfast.... add in another meal. So I decided to test out some muffins for her that she could snack on and fed herself for breakfast along with some fruit. I didn't want them to have any sugar and tried to keep them as healthy as possible Here is what I came up with. She ate 4 of them yesterday for breakfast. They are the perfect snack size I even snuck one yesterday with my morning protein shake. They aren't sweet so if your kids are used to super sweet muffins they probably won't love these.
These healthy mini blueberry banana muffins are sweetened naturally with mashed banana and maple syrup. So there is NO ADDED SUGAR which to me is so important when feeding my littles.

Serves: Makes about 35 mini muffins
INGREDIENTS
- 2 cup oat flour (I made this by putting organic oatmeal in my blender)
- ½ tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large over ripe bananas, mashed
- 2 eggs
- 1 cup milk
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 1 cup frozen blueberries (I used the wild blueberries)
INSTRUCTIONS
- Preheat oven to 350 F.
- In a medium-sized bowl, mix together oat flour, cinnamon, salt and baking powder
- Next, add the mashed bananas, eggs, milk, vanilla extract, and maple syrup. Mix until well combined but remember not to over mix then gently fold in the the blueberries.
- Spray the mini muffin tin with cooking spray or use mini muffin liners. And fill each cup to the top
- Bake in oven for about 15 minutes or until a toothpick inserted comes out clean.
- Refrigerate them in an airtight container
As you can see they are a hit! Such easy finger foods for her to feed herself AND it only took a few minutes to make them. I kept my in an air tight container so that they can last for a few days. I added some cut strawberries for her and that was breakfast!
Please take a minute to look at those rolls!!
