Ready for a seriously good cake but not a healthy one. This reminds me of some good ole fashion cooking my grandma would do. There isn't anything special to this cake, I added some coconut flakes to fancy it up but it is just some down home baking. Leo and I went and picked peaches a week ago and I decided to make some sort of dessert. I gave Jay a few different options and leave it to my Midwest born husband he chose the one that was the most midwest (nothing against midwestern cooking it just isn't the most healthy but it is always delicious). I mean you use peach jello in this, I couldn't tell you the last time I bought jello. But nonetheless this is good! So if you have some fresh peaches I highly recommend this cake.

For graham cracker crust and topping:
- 2 cups crushed graham crackers for bottom and 1/2 cup for top of cake
- 1/2 cup unsalted butter-melted
- 6 tablespoons sugar
- Coconut flakes
- 5 cups fresh peaches-peeled and diced into 1 inch peaces (about 5 medium peaches)
- 2 cups water
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1 (3 oz.) package peach jello
- 8 oz. cream cheese-room temperature
- 3/4 cup powdered sugar
- 1 teaspoon vanilla
- 1 (8 oz) carton cool whip
Instructions
- Preheat oven to 375 F. In a bowl combine 2 cups crushed graham crackers and 6 tablespoons sugar. Add melted butter and stir with a fork until all crumbs are moistened.
- Press the crumbs and butter mixture into the bottom of a 13×9 inch baking dish bake for 8 minutes. Set aside to cool.
- In a sauce pan combine water, 1/2 cup sugar and cornstarch, stir well and bring to a boil. Add the package of peach jello and stir to dissolve. Remove the mixture from heat and allow to cool completely, then add diced peaches. Stir and pour peach jello mixture onto your cooled crust. Place in the fridge until set (about 4 hours). *I let mine set overnight
- For the topping mix in a mixing bowl powdered sugar, softened cream cheese and vanilla. Add in the cool whip and mix on low. Then spread over the top of peach filling. Place in the fridge to set and top with the 1/2 cup reserved graham cracker crumbs and coconut flakes.
As you can see this is an easy recipe to make. Leo even helped me on the whip topping. So if you have fresh peaches and want something other than a peach pie this is the dessert for you!
