Another breakfast recipe! When things get busy a lot of time breakfast is the only meal I actually make…or make well. There has been a lot of take out and roasted chicken for dinners around our house lately. When ever I make Puffed Pancakes for friends I am always surprised when people say they have never had it. I grew up eating it so it has always been a staple in our house. If you have never had it you need to try it, it’s delish! Also super easy to make large portions for a bigger group, pretty much the ideal sunday brunch.
Puffed Pancake
Ingredients:
2 eggs
1/2 cup milk
1/4 cup sugar
1/2 teaspoon vanilla extract
2/3 flour
2 tablespoons butter
1/2 teaspoon cinnamon
Directions
Preheat oven to 400 degrees.
Whisk eggs, milk, sugar cinnamon and vanilla extract. Once well mixed add flour and whisk so that only a few small lumps are still visible.
Put the butter in a 91/2-inch pie or square pan and place the dish in the oven until butter is melted. Then add the pancake batter on top of the butter. Bake for about 30 minutes, or until the sides are high and golden brown.
Add you favorite toppings. I love to add fresh berries and powdered sugar topped with a little syrup.
