I love BBQ season, but I don’t love all the temptations of attending a BBQ. So instead of diving into the chips and salsa, potato salad, and all that other yummy stuff I’ve been bringing a veggie packed quinoa salad. If you are like me and trying to eat healthy be sure to seek out the fruits and veggies trays and snack on those versus all the chips etc.

I cooked the quinoa and sat it to the side to cool. While it cooled I cut up every vegetable I had in my fridge. Tossed it all together with some olive oil, salt and pepper, and juice from two lemons. I definitely recommend using mint, it was delicious and I happened to have some from the farmers market so it was a win win! I refrigerated it about 2-3 hours before I ate it. It is such a pretty salad full of color and it is yummy as well!

- Cherry Tomatos
- Carrots
- Cucumber
- Bell Pepper
- Fresh Mint
- Fresh Parsley
- Lemon
- Oil Olive
- Salt and Pepper
- Optional: Feta Cheese
