Carey and I had the most delicious clams while we were in Capri earlier this summer. Since we have gotten home we have been trying out a bunch of different recipes trying to recreate those magical clams. We have not "nailed it" yet, but we did come across this great recipe.
INGREDIENTS
3 Tablespoons butter
1 Tablesppon minced ginger
4 cloves minced garlic
3 teaspoons fish sauce
4 teaspoons red curry paste
1 Cup vegetable stock
I cup coconut milk
1 Tablespoon corn starch
I pound clams and 1 pound mussels, rinsed and cleaned

Handful of fresh copped cilantro
Lime wedges to taste
DIRECTIONS
1.Melt the butter in a large pot over medium heat.
2.Add garlic and ginger and cook for a couple minutes. Then add red curry paste and fish sauce, stir until well combined.
3. Add broth and coconut milk, stir. I like to add cornstarch here to make the sauce a bit thicker.
4. Add clams and mussels, cook covered for 6-8 minutes. Stir occasionally and discard any clams or mussels that are still closed.
5. Transfer to a larger serving bowl and add cilantro and lime wedges.
