So I've been craving a good kale salad and I can't seem to find one in our town. So I decided to take it upon myself to create the perfect kale summer salad, which included a healthy dose of grapefruit. I have made it a few times this week and I keep telling my husband that it tastes like summer in a bowl. This pregnancy I have craved salad the most (and sour patch kids) and this salad surely satisfies my craving. Plus it is also very pretty so if you are looking for a salad to bring to a BBQ this is your salad.
Kale and Grapefruit Salad
Ingredients:
For the dressing, whisk together:
Ingredients:
- 1 cup quinoa
- Kale, chopped
- Extra virgin olive oil
- 1 tsp salt, kosher
- 2 medium-sized grapefruit
- 2 tbsp grapefruit juice (use from one of the grape fruits)
- 1 lime, juiced
- 1 tsp honey
- 1 tsp mint
- black pepper, ground
- 1/2 cup almonds, chopped
- 1/2 cup radishes, thinly sliced
- 1/4 cup carrots, chopped
- 1/4 cup fresh mint, julienned
- Cook 1 cup of quinoa according to box instructions.
- When quinoa is done, transfer to a mixing bowl and cool to room temperature or in the fridge if you need it to cool faster.
- In a large bowl:
- chop kale
- Using your hands, gently massage kale with:
- 2 TBS extra virgin olive oil
- 1/2 tsp salt, kosher
- Remove peel and gently segment:
- 2 medium-sized grapefruit, I used 1.5 of the grapefruit and I saved the other .5 for the dressing.
- When quinoa has cooled to room temperature, mix in with the kale along with:
- 1/2 cup chopped almonds
- 1/2 cup thinly sliced radishes
- 1/4 cup chopped carrots
- 1/4 cup fresh mint, julienned
- mix in grapefruit
- Transfer to a serving dish, toss and serve with dressing.
For the dressing, whisk together:
- 4 oz extra virgin olive oil
- 2 tbsp or 1/2 of a grapefruit, juiced
- 1 Lime, juiced
- 1 tsp honey
- 1 tsp mint, dried
- 1/2 tsp salt, kosher
- 1/8 tsp black pepper, ground
Like I said before this is literally summer in a bowl. I like to dress each salad individually and save the salad and dressing in the fridge for later. I normally don't like salad overnight in the fridge but kale holds up exceptionally well and so I have been eating this for lunch and using the left over dressing.
The week is flying by yet again. I was hoping to get some new blog photos for Friday but I wasn't able to pull that together this past weekend or week. So I won't have another post probably till Monday. I have so many new spaces to show you. Next Monday I'm going to go over a few new little spaces I've redesigned and I'm also working pretty hard on revamping our outdoor patio. We just got new stamped concrete this past week and we are finally able to move the furniture onto it yesterday. I can't wait to show you how it all turned out. But I need some more final touches and I'm hoping Home Goods will be the answer to my decor issues!
