I've decided winter is over! Well maybe not, but I'm so over soups and the crock pot. I decided this week just because it feels like winter doesn't mean I have to eat like it's winter. This salad is inspired by one of my favorite salads I get in Scottsdale. I can even get my husband to eat this salad, he claims "it's the best salad" I make. Even though we have a few more weeks of winter, we might as well eat like it's spring! So pour yourself a Arnold Palmer and enjoy this refreshing salad.
Sunflower Market Salad
- Blackened chicken
- Mixed greens
- Goat cheese
- Dried strawberry
- Yellow Bell Pepper
- Sunflower seeds
- Balsamic vinaigrette
- Blacken chicken in a pan on the stove. I cooked mine with olive oil and salt and pepper. Remember to turn the fan on over your stove. When blackening chicken there is some smoke.
- Mix together all the ingredients.
- Serve with balsamic vinaigrette.
This will be my last blog post as my due date has come and gone. So much for an early baby (boo)! Hopefully I'll be announcing the arrival of baby Leo in the next few days. Until then I'll be walking and bouncing around my house trying to get him to come out!
