Summers are for BBQing, but I get tired of the same type of things on the grill. I created this thai grilled chicken served with a cashew quinoa salad. I have been gluten, egg, dairy, and peanut free for a few months now so coming up with creative recipes with all my restrictions is limiting. You could make this quinoa salad with peanuts if you wanted but the cashews really add a good flavor to it. So when you are looking for a healthy meal this week try this recipe out!
Grilled Chicken

For The Salad Dressing -

Ingredients:
- 4 Chicken breasts
- Cilantro
For the Thai Sauce-
- 1/2 cup sweet chili sauce
- 1/4 cup soy sauce
- 2 tbsp agave
- 2 tbsp rice vinegar
- Juice from 1/2 lime
- 1 clove garlic, minced
Directions:
- Whisk all the sauce ingredients together. Set aside about ½ of the sauce to marinade the chicken in.
- Place the chicken in a bag and pour marinate into bag. Return to the refrigerator for 30 minutes or so. After 30 mins to 1 hour grill your chicken as you would normally do.
- After the chicken has cooked, drizzle over the extra sauce and garnish with cilantro.
Gluten Free Cashew Quinoa Salad
Ingredients:
- 1 cup uncooked quinoa
- 2 cups shredded cabbage, I used the bagged kind to save time
- 1 red bell pepper diced
- 1 bundle of green onions diced
- 1 cup shredded carrots
- 1/2 cup chopped cilantro
- 1 can of cashew halves
- fresh lime
For The Salad Dressing -
- 1/4 cup sweet chili sauce
- 2 tbs grated ginger or ginger paste
- 3 tbsp soy sauce
- 1 tbsp agave or honey
- 1 tbsp rice vinegar
- 1 tbs sesame oil
- *optional a spoonful of peanut butter
Directions:
- Rinse quinoa with cold water in mesh strainer and cook per directions on package.
- Add agave and the sweet chili sauce (*and peanut butter) to a microwave safe bowl; heat in microwave for 20 seconds. Add in ginger, soy sauce, rice vinegar, and sesame oil and stir until mixture is smooth.
- Add dressing to the cooked quinoa.
- Add in the cabbage, bell pepper, carrots, onions, and cilantro to the quinoa. Squeeze the lime into the dish. Then garnish with cashews and more cilantro.
- Served chilled
Our family is headed on vacation for a week to Sun Valley, so I'll be taking the week off! I'm so excited to get some mountain air and spend some time hiking!
