Stir fry is something that has been getting eaten at our house a lot. I can make a big batch for dinner and eat it as left overs for lunch during the week. I was getting tired of chicken so decided to make a pork recipe. This is one of my best batches I've made thus far so I thought I'd share it with you!
Thai Pork Stir-Fry
1 lb Pork Chops
1 Clove Garlic, minced
2 tbs Ginger Paste
2 tbsp sweet chili sauce
1. 1/2 tbs soy sauce
6 tsp sesame oil
2 tbs rice wine
1 tsp curry powder
1 tsp red pepper chili flakes (I used way more cause I like spicy)
1 bunch of green onions
1 bunch of asparagus
1 cup shiitake mushrooms
1 red bell pepper, diced
1 yellow bell pepper, diced
1 package of sugar snap peas
1/2 cup chicken stalk
Cilantro for garnish
Brown Rice

2 tbs rice wine
1 tsp curry powder
1 tsp red pepper chili flakes (I used way more cause I like spicy)

1 red bell pepper, diced
1 yellow bell pepper, diced
1 package of sugar snap peas
1/2 cup chicken stalk
Cilantro for garnish
Brown Rice
Directions:
Cut pork and place in bowl. Add garlic, chili flakes, ginger, thai sweet chili sause, soy sauce, 4 tsp sesame oil, rice wine, curry powder, and pepper with meat. Marinate for 30 minutes.
Chop onions, asparguas, mushrooms, red and yellow bell peppers, sugar snap peas.
Cook meat in the woke for about 2-5 minutes. Remove pork, leave in the marinade.
Add 4 tsp of sesame oil in onions, peppers, asparagus, and peas. Cook 5 minitues, I added in a little more of the sauce. This is where I don't follow directions and cook to taste. I added in more ginger, soy sauce, and sweet chili sauce.
Add in mushrooms and re-add in pork. Turn on low and let cook for a few more minutes.
I served mine wiht brown rice and garinshed the meal with cilantro!
Like I said this was my favorite stir fry combo I've made thus far! Hope you enjoy it as much as I do!
