I hope everyone is rested from your Thanksgiving holiday. I realized I hadn't blogged in about 2 weeks. We were down with colds then Thanksgiving came and life has just been busy. But if your anything like me you might of splurged this past weekend during thanksgiving. (My favorite splurge is pumpkin pie with LOTS of whipped cream.) I still managed to get my workouts in all week long but my eating was not on point. So this week I have gotten back at it with this winter salad. I know salads don't sound good when it is 30 degrees but I promise this one will hit the spot.
Ready for a seriously good cake but not a healthy one. This reminds me of some good ole fashion cooking my grandma would do. There isn't anything special to this cake, I added some coconut flakes to fancy it up but it is just some down home baking. Leo and I went and picked peaches a week ago and I decided to make some sort of dessert. I gave Jay a few different options and leave it to my Midwest born husband he chose the one that was the most midwest (nothing against midwestern cooking it just isn't the most healthy but it is always delicious). I mean you use peach jello in this, I couldn't tell you the last time I bought jello. But nonetheless this is good! So if you have some fresh peaches I highly recommend this cake.
Summers tend to be busy for all of us. We eat out more often, we splurge on ice cream, we go on vacation. So because of this I try and eat a fairly clean breakfast and lunch. Then if we end up eating out for dinner or getting ice cream later that night I really don't beat myself up about it. Plus I'm pregnant so whatever.... with that being said I am always trying to come up with new breakfast ideas. After too many weeks or protein shakes or avocado toast with a fried egg I decided it was time to work on some new protein breakfast bars. I came up with these little guys and they are probably my best ones yet. A little side note you can make your own chai spice, but I didn't feel like spending $20 on all the spices to make that so I got a canister of chai latte mix. It does have sugar in it but I only used 3 tsp so it wasn't enough to bother me.
So my husband is very very anti fish tacos. So I am always searching for a way to mask the fish taste, me on the other hand could live off of fish tacos! I have made a few different recipes but this spicy cajun one takes the cake on the best fish taco recipe. And the one my husband will actually eat. I added in the cilantro lime rice just in case Jay didn't want to eat any tacos and it has now become a total staple at our house. So simple and so good. I won't lie there is a bit of prep in this meal, but it is worth it.
So I've been craving a good kale salad and I can't seem to find one in our town. So I decided to take it upon myself to create the perfect kale summer salad, which included a healthy dose of grapefruit. I have made it a few times this week and I keep telling my husband that it tastes like summer in a bowl. This pregnancy I have craved salad the most (and sour patch kids) and this salad surely satisfies my craving. Plus it is also very pretty so if you are looking for a salad to bring to a BBQ this is your salad.
It is Mother's Day weekend and if you are looking for something to make I highly suggest these scones. All you need to spare is 45 minutes and maybe a quick trip to the store. I had all the ingredients at home except the coconut extract (I had to buy imitation) and the heavy cream but I accidentally bought heavy whipping cream but it worked perfectly. I have a girlfriend visiting from out of state this weekend and I always like to have some quick breakfast options for guests if they wake up early or we are in a rush to get out of the house in the morning.
This cookie title is a bit of a mouthful to say but are delightful to eat. These cookies are so delish my dog broke through an hard plastic tupperware container with clips on the side to eat 15 of them. My son was devastated my husband was so mad at the dog and I was annoyed cause I never bake. So I have since made them a few times. I am not much of a chocolate kind of gal and never bake but these are easy enough, not super messy, and are somewhat healthy that I don't mind making them once a month.

A few months ago I started eating more plant based. By no means am I a vegetarian or vegan. 90% of the dinners, 50% of my lunches, and 10% of my breakfasts at our house include meat. In fact I write this blog post as I eat a bowl of carrots, celery, and tuna fish. But the last 3 months I have gone more plant based with my diet. The reason I started doing this is because the older I've gotten the more grossed out with the texture of meat. I also started cutting out dairy when I was nursing Leo and I liked the way I felt. Although I still eat cheese I have really gotten into all the cheese alternatives.
I'm the queen of sauceless pasta. I'm a weirdo and don't like sauce on my pasta. I am not the biggest pasta fan in the first place (I KNOW SHOOT ME ) I might be the first person in the world to say that they don't really care for pasta. I'm not a crazy health freak or anything I just am all about balance and I'd rather have that extra glass of wine or dessert. So instead I rather have a salad for dinner than pasta. But my hubby loves pasta so I try a few times a year (I know I'm terrible that I make pasta a few times a year) to make a new pasta recipe. This being one of them and let me tell you.... I LOVED IT!
